3/4 C Butter Substitute (earth balance) They have it at Trader Joe's
1/3 C Sugar
3/4 C Brown Sugar
1/2 C Soy Milk
1 C Flour
1/4t ginger powder
3C rolled or quick cooked oats
1C dried Cranberries
Cream the butter and sugar together, add the Vanilla and the soy milk
Add the dry ingredients to the butter and sugar then fold in the oats and the cranberries Bake on ungreased cookie sheets at 350 for 10-15 min.
If you make them about 1 large teaspoon size this recipe makes about 36 cookies.
